10 grams dried lemon peel
put the bark and lemon in a coffee percolator with 500ml of water percolate for 20-25min (you will have lost some water replace it)
add zest and juice of 1 medium lime
2 cups of sugar (I like organic turbinado)
1 table spoon of citric acid
simmer until sugar is dissolved, strain (I use a french press)
I add a couple of ounces of neutral alcohol (like everclear, but vodka would work) as a preservative.
It should last a few weeks in the fridge. I mix about an ounce of the syrup, with 2.5 oz of gin and top with soda water!
